Hi friends! I sit typing this blog from my backyard as my kiddos swing in the warm Wilmington sunshine. I have something to propose...self-care Saturday. If you're anything like me, being a busy Mama sometimes I get so wrapped up in taking care of everyone else around me that I forget to nourish and nurture myself. I rush making the kids their breakfast of choice and suddenly it's 12:30 and I've been running on nothing but coffee and adrenalin. Sound familiar? Self-care help us to honor our bodies, nourish our minds, and prevent an assortment of ills. So let's take back Saturday! Okay, I know that's not realistic. But let's take back 20 minutes of Saturday! Starting today! So how can you treat yourself today? Today, I made a quick and healthy breakfast that I actually want to eat. Here's the recipe below. Caprese Avocado Toast
1 slice organic whole wheat bread
1 half avocado
Schmear cream cheese
3 leaves fresh basil
2 slices beefstock tomato
Garlic powder to taste
Salt and pepper on tomato
Toast wheat bread, schmear cream cheese, layer avocado and sprinkle garlic powder, layer basil and tomato. Sprinkle salt and pepper on tomato to taste. Enjoy!
